Breakfast (or snack) for dessert for breakfast? Yes, please! This chia seed pudding topped with gr8nola has so many great flavors and is packed with fiber to keep you full and satisfied. This is one of my favorite flavor combinations. The cinnamon, cardamom, and vanilla complement the coconut milk very nicely!

What You’ll Need

1/2 cup chia seeds, divided
2 cups coconut milk, divided
2 tablespoons hemp hearts, divided
1/4 teaspoon ground vanilla, divided
1/4 teaspoon ground cardamom, divided
1/4 teaspoon ground cinnamon, divided
a pinch of Pink Himalayan salt
2-3 drops stevia, each cup/bowl
2 small strawberries, halved
1/2 cups gr8nola, divided
Bee pollen

What You’ll Need To Know

1. Add 1/4 cup chia seeds, 1 tablespoon hemp hearts, vanilla, cardamom, cinnamon, salt, stevia to a bowl or cup and mix.

2. Next, add in 1 cup coconut milk and mix vigorously. Let mixture sit for 10 minutes and mix vigorously to remove any clues. Let chia seed mixture sit for at least 2 hours or overnight.

3. Once ready to enjoy, top with 1/4 cup gr8nola, bee pollen and one strawberry. Enjoy!
