The answer to that question can be both yes and no, depending on the recipe. Soak times may vary from 10 minutes to an hour or none at all! Certain recipes call for soaking chanterelles in water or brushing them with a pastry brush to remove dirt. It is important to remember that a quick rinse with lukewarm water will do absolutely nothing to remove any dirt. Therefore, read through your chosen recipe beforehand to determine whether it calls for soaking before you begin cooking. Do keep in mind that whatever you do while preparing, soaking chanterelles doesn’t take too much effort and can be beneficial as it can help mushrooms retain flavor as they cook.

Cream of Chanterelle Soup (Vegan)

Yields 6 servings



  • 2 tbsp olive oil
  • 1 medium onion (4 oz, 120 g), diced
  • 3 cloves garlic, minced
  • 1 lb fresh chanterelles; cleaned and roughly chopped
  • 1 lb white button mushrooms
  • 1/2 lb shiitake mushrooms
  • 2 medium carrots, peeled and diced
  • 1 celery stalk, diced
  • 3 medium potatoes, peeled and diced
  • 2 sprigs rosemary, leaves finely chopped, can be replaced with thyme
  • 3 cups vegetable broth
  • 1 cup coconut milk from a can
  • 1 tsp ground nutmeg
  • ½ tsp smoked paprika powder
  • 1/2 tbsp salt
  • 1/2 tsp black pepper, freshly ground
  • 4 tbsp heavy cream (60 ml)
  • 1 tbsp fresh parsley leaves, chopped; for sprinkling


Heat olive oil in a large deep pot over medium heat. Add finely diced onion and sliced garlic and cook until soft and translucent, stirring occasionally.

Add chanterelles, button mushrooms, shiitake, carrots, and celery. Continue cooking for 10 minutes until the excess liquid is released from the mushrooms and evaporates completely.

Add potatoes and rosemary leaves. Pour in vegetable stock and coconut milk and cover with a lid. Cook for 20 minutes over medium heat until potatoes have softened.

Next, Season with nutmeg, smoked paprika, salt, and pepper and blend with an immersion blender until completely smooth.

Pour into soup bowls, drizzle with heavy cream and garnish with parsley, olive oil, and coconut cream.

We garnished mushrooms stuffed with minced garlic, black pepper, and parmesan cheese for this recipe. (Not vegan) Mushrooms were baked at 350° F (180°C) for 20 minutes.
