Cozy Winter Chanterelle Mushroom Risotto Recipe
Makes 6-8 servings
WHAT YOU’LL NEED:
1 lb fresh chanterelle mushrooms, cleaned and sliced
2 fresh chanterelle mushrooms, cleaned and sliced for roasting
1 onion, diced
4 cloves of garlic, minced
2 cups Arborio rice
6 cups chicken or vegetable broth
1 cup grated Parmesan cheese
2 tbsp olive oil
2 tbsp basil
1 tbsp oregano
Salt and pepper to taste
Garnish: Red chili flakes & roasted chanterelle
WHAT YOU’LL NEED TO KNOW:
Preheat oven to 400F. In a baking sheet, add in sliced chanterelle mushrooms and coat with olive oil. Bake for 30 minutes.
While the mushrooms are roasting, heat the olive oil in a large saucepan over medium heat. Add the diced onion, and minced garlic, and sauté until the onion is translucent.
Add the sliced mushrooms and sauté for a few minutes until they are softened. Stir in the Arborio rice and cook for 1-2 minutes, until the rice is lightly toasted.
Slowly pour in the broth, constantly stirring, one cup at a time. Continue to cook the risotto, frequently stirring, until the rice is tender and the liquid is creamy.
Stir in the Parmesan cheese and chopped parsley. Season with basil, oregano, salt, and pepper to taste.
Serve hot and garnish with extra Parmesan cheese and red chili flakes if desired.
