Balls without the hassle of the blender or baking. A few simple staple ingredients and you’ve got yourself some insanely delicious Dark Chocolate Chip Cookie Dough Bites that are a great sugar-free treat.
I love a recipe that doesn’t require many kitchen utensils or much washing up. This recipe is just that. These Dark Chocolate Chip Cookie Dough Bites are the kind of thing I like to enjoy every now and then when I’m lying on the couch after dinner and just feeling like savoring something delicious but don’t feel like having to clean a blender or food processor.
It’s a one-bowl pantry-staple recipe, and you get the bonus of having a delicious homemade dessert or snack for the rest of the week ahead with wholesome ingredients.
These are actually a perfect snack due to the fact that they are sugar-free, plant-based, high in fiber, and is essentially just made of nuts and cacao.
1 cup peanut butter
4 tbsp coconut flour
3 tbsp mesquite powder
1/4 cup coconut oil, melted
20 drops liquid stevia or 1/2 tsp monk fruit
1/2 tsp vanilla extract
1/4 cup cacao nibs
3 tbsp cacao powder powder
Coconut shavings, unsweetened for rolling
What You’ll Need To Know
Combine all ingredients, except the coconut shavings, in a bowl and mix into a dough with your hands. If the mixture is too wet, continue to add more coconut flour until it’s dry enough to roll into balls.
Place in the fridge for 30 minutes to harden slightly.
