There is no denying that breakfast is the most important meal of the day. So, why wouldn’t you start your day right? Even if you’re short on time, you deserve a clean, delicious breakfast every morning. Last week I was a bit tired of eating my usual oat bran bowl and wanted to switch things ups with quinoa. (I bet, you never thought about eating quinoa for breakfast!) Using coconut milk and crushed pineapple, this Piña Colada inspired quinoa is like a tropical holiday in a bowl! The best part of this recipe is that it’s filling and satisfying.
What You’ll Need
1 cup quinoa
14 oz coconut milk
1 cup of crushed pineapple (canned or fresh)
1 Tbsp monk fruit or stevia
1 tsp pure vanilla extract
sea salt to taste
Coconut flakes
Optional: 2 scoops of pea protein (I used Vega One Protein Viva Vanilla flavor)
What You’ll Need To Know
In a medium saucepan, bring the quinoa and coconut milk to a boil. Cover, reduce heat to low and simmer for 10 minutes. Turn off heat and leave standing for 6 more minutes. If you’re using canned pineapple, drain the pineapple and stir in 1/2 cup of the pineapple juice into the cooked quinoa. Add the pea protein sweetener and vanilla and mix well. Add a bit of salt to taste. Stir the crushed pineapple into the mix and serve. Garnish with coconut flakes and enjoy!
Keeps for 2 days in a sealed container in the fridge. Makes 6 servings.
This recipe also works well with Strawberries instead of pineapple.
