This Kale + Carrot Salad is a basic salad that features tuscan kale, carrots, and hemp seeds tossed in a lemon vinaigrette.
I love kale. In smoothies, in salads or juiced, this dark leafy green is a staple in my house hold. This basic Kale and Carrot salad was inspired by the kale and carrot side salad at Lyfe Kitchen in Palo Alto. Lyfe Kitchen uses dinosaur kale and shredded carrots, tossed together in a lemon juice. Yep. It’s that basic. I added my own spin to this refreshing salad by adding in hemp seeds for it’s healthy properties, omegas and protein; tossed it all together in a lemon vinaigrette dressing (lemon, garlic and tad bit of olive oil).
What You’ll Need
2 cups Tuscan or Dinosaur Kale, chopped
1/2 cup shredded carrots (here’s a good how-to)
1 tablespoon lemon vinaigrette
Sometimes, I’ll omit the hemp seeds and add in avocado for en extra boost of protein of healthy fats.
