Fast Vegetarian Dinner
Here’s a quick and easy zucchini pappardelle recipe that’s perfect for a weeknight meal. This dish comes together in under 30 minutes, and it’s a great option if you’re looking for a fast vegetarian dinner. You can also veganize it but swapping out the Parmesan cheese for a vegan alternative like Violife’s Just Like Parmesan.
To start, you’ll need to slice the zucchini into thin ribbons. I like to use a Flat Blade Spiralize ormandoline for this, but you can also use a sharp knife. Once the zucchini is sliced, cook it in a large pan over medium heat until tender. Then, season with EVOO, lemon, red chili flakes salt, and pepper, and toss everything together. I like to top mine with some freshly grated Parmesan cheese, but that’s optional. Enjoy!
Health Benefits of Zucchini
Zucchini is a healthy vegetable that belongs to the squash family. This popular summer squash is often used in recipes like zucchini bread and ratatouille. But this versatile veggie is more than just a tasty ingredient — it’s also packed with health benefits. It is a low-calorie food that is rich in nutrients. Zucchini is also a good source of fiber, which can help to regulate digestion and prevent constipation. Additionally, fiber has been shown to reduce the risk of heart disease and other chronic illnesses.
Furthermore, zucchini is a good source of vitamins A, C, and K, as well as potassium and magnesium. These nutrients are essential for maintaining a healthy immune system, bones, and muscles. They can also help protect against some chronic diseases, such as cancer. Overall, zucchini is a nutritious vegetable that offers many health benefits.
